Thick and Hearty Chicken & Vegie Soup
Today my little man and I had a busy day. I did aerobics, then we did some gardening and then we were back at the Sports centre for his swimming lesson and then home again until school pick up.
We made dinner today and slow cooked it all afternoon so it was ready when we got home from soccer at 6:30. It was so yummy I thought I'd share it, no pics today, the pics dont do it any justice...you just have to trust me and make it.
Thick and Hearty Chicken & Vegie Soup (Paula's recipe)
- 500g chicken, diced.
- 1/4 butternut pumpkin (I bought half a piece of butternut pumpkin and halved it again)
- 3 or 4 potatoes, diced
- 2 long celery sticks, diced
- 1/2 brocolli, diced
- 20 beans, diced
- pepper, rosemary and
- 2 tins of cream of celery soup
- 1 litre chicken stock
- 1 cup barley
- 1 onion diced
1. Cut all vegies and put in slow cooker with stock, two tins of cream of celery soup, peper and herbs.
2. Dice chicken and brown. Add to slow cooker.
3. Cook on high in a slow cooker for 4.5 hours.
I started this at about 1:30 and it was ready for dinner at 6:30.
If you dont have a slow cooker, I highly recommend you get one. I use my slow cooker at least once a week. They are one of the best inventions, food tastes tender, the flavours are amazing and you can leave it cooking while you do other things...like take the kids to after school sports.
